Serves 4
Ingredients:
500g Chicken Thigh Fillet or Chicken Breast
1 Green Capsicum, diced
1/2 Packet Fajita Seasoning
2 Cups Shredded Cheddar or Colby Cheese
1 Packet Tortillas
Sour Cream
Salsa
Method:
- Cut chicken into thin slices.
- Cook on high heat in a frying pan until cooked through.
- Add capsicum and cook until hot.
- Add fajita seasoning and mix well.
- Remove chicken mixture from heat.
- If necessary, soften tortillas according to instructions on the package.
- Spread the chicken mixture on half a tortilla, then sprinkle with cheese.
- Fold in half and place in a clean frying pan on medium-high and heat until tortilla is slightly toasted.
- Flip and do the same on the other side.
- Cut quesadillas into 3 or 4 slices.
- Repeat with leftover tortillas.
- Serve with sour cream and salsa.
